I admire my mother-in-law for many reasons. She has a genuine heart, is unconditionally generous, is devoted to her family, a very organized and tidy housekeeper and a really amazing cook. She is always prepared for any need her family may have.
I would say that her way in the kitchen a good representation about how all the little things lead up to something bigger and better. She has an array of very simple recipes, using a short ingredient list that are always as nutritious and as they are tasty. She also has that skill of coming up with a meal based on what is on hand in her home without having to run to the store. This waste-not-want-not approach is a throwback to simpler, efficient days. It’s really admirable.
So, yesterday we had a last minute brunch, celebrating family that was in town. With just an overnight to plan, we all came together to create a big ole feast for one last hurrah with all the kids in town. My mother in law brought the most simple yet yummy salad that I found myself camped by it picking at it as if it were a dessert. She said she just put together whatever she had in the fridge.
And today I woke up craving her salad and I had to recreate it. I named it the “Always Pre-Peared Salad” because no matter what the call, she is prepared for anything for her family.
The Always Pre-Peared Salad
- 3 cups mixed greens
- 1/2 a pear, sliced thin
- 1/4 cup goat cheese, crumbled
- Handful blueberries
- 1 – 2 tb. Balsamic Vinegar
Spread mixed greens evenly on a platter, layer pear slices, crumbled goat cheese and top with blue berries. Prior to serving, sprinkle balsamic vinegar lightly over salad.
